About Producer Nerdy stuff Serving

This wine is a collaboration between the talented winemaker Willy Allion and the renowned French sommelier Philippe Faure-Brac, who was awarded the title of "Best Sommelier in the World" in 1992. The winery is situated along the Loire, approximately 50 kilometers east of the city of Tours. The wine is named "La Dilecta" in honor of Honoré de Balzac, who bestowed this affectionate name upon his first love, Madame de Berny. This partnership combines Allion's winemaking expertise with Faure-Brac's exceptional palate, resulting in a wine that beautifully expresses the terroir and character of the Loire Valley.

Vineyard

The grapes are harvested from two plots of old vines located on the slopes of the Cher on a clay-limestone terroir and selected for their superb aptitude for maturation.

Fermentation

Monitoring of ripeness by regular berry tasting. Grapes are harvested with ripe fruit aromatic profiles. skin-contact maceration for 12 hours, then gentle pressing and light settling to preserve the aromatic potential. Traditional vinification with temperature control (17 to 19°C).

Maturation

Aged on fine lees with regular stirring (8 to 10 months) before bottling in July.
